Two young chefs have been cooking up a storm to create a new product for a popular butchers.
Nicholson’s Butchers, in Park View, Whitley Bay, had been working with Year 8 students at Monkseaton Middle School to come up with a summer quiche to sell this month.

And after narrowing it down to two finalists, customers at the store chose the quiche of Parma Ham, Roasted Vegetables and Smoked Cheese – created by 14-year-olds Olivia Forbes and Mollie Leach – as the winner.
They narrowly beat the quiche of Kale, Bacon, Potatoes and Goat’s Cheese put together by Zak Gibling and Serena Hogarth.
Monkseaton teacher Mrs Martin said: “It was really exciting when Kathryn (Nicholson) agreed without hesitation to work with Monkseaton Middle School to run the competition.
“This meant that the pupils could design and make a quiche to suit the needs of an actual business and their customers. It enabled the pupils to consider seasonality, cost, quality as well as flavour and appearance.
“I was extremely impressed with the sophisticated flavour combinations, amazing pastry and crimped edging produced by all the pupils.
“Kathryn came into school to judge the quiches and she provided the pupils with very positive feedback and spent time discussing the world of work with them.”
Olivia and Mollie said: “We are looking forward to seeing the quiche idea on sale in the butchers and talking to the customers who will buy our product.”
Kathryn said: “Both the flavour combinations went down extremely well with our customers. We’re very grateful to everyone who has taken part in this competition, the pupils and staff at the school and our customers who gave us some great feedback.
“The winning quiche is now on sale in the shop.”
“And we’re also happy to take orders for bigger quiches for special occasions and parties now the barbecue season is almost here.”
